Why remineralize RO water for coffee or tea?

Reverse osmosis strips out the minerals — magnesium especially — that help pull flavor from coffee and tea. Adding a measured mineral dose back gives you water built for extraction, the same idea baristas use when they build brewing water by hand.

Which model is best for brewing?
